MABO TOFU ( 麻婆豆腐)

INGREDIENTS (for 4) :
-100 gr minced pork
- 1 firm tofu

SPICE:
- 1 small piece ginger (finely chopped)
- 1 clove garlic (finely chopped)
- ⅓ spring onion (finely chopped)
- 2 - 3 red chilli (finely chopped)

SEASONING:
- 1 tsp shao xing rice wine
- 1 tsp chilli bean sauce
- 150 ml stock
- ⅓ tsp sugar
- 1 tbsp soy sauce
- 1 tsp oyster sauce
- A dash pepper
- 2 tbsp cornflour
- 1 tsp sesame oil

METHOD:
1. Cut tofu into diamond shapes (or just squares) with 2 cm sides.
    Bring 400 ml of water to the boil  and add 1 tbsp of oil.
    Add tofu and cook lightly for a few minutes.
    Drain off water and set.
2. Heat 1 tbsp of oil in a work and stir-fry minced pork until thoroughly cooked.
    drain off oil.
3. Heat 1 tbsp of oil in a work and stir-fry spices until fragrant.
    Add the cooked minced pork and a drop of rice wine at the side of the pan.
4. Pour chilli bean sauce and stock into the wok.
    Then, add the tofu and bring to the boil.
    Add sugar, soy sauce , oyster sauce, pepper.
    Thicken with cornflour blended with water.
    Lastly add a drop of sesame oil.
